Easy 4-Ingredient Vegan Chocolate “Chunky Monkey” Soft Serve: Chocolate Banana Soft Serve Mixed with Walnuts and Chocolate Chips

I LOVE Ben and Jerry’s Chunky Monkey Ice Cream. And just all ice cream in general. I could eat it every day, multiple times a day. Even during the freezing winter months haha! That’s what inspired me to create this – a vegan version that only takes 4 ingredients to make, isn’t too sugary, and packs in great and good-for-you ingredients! Simply blend frozen banana with some chocolate soy milk, the daily recommended serving of walnuts (1/4 cup), and some dark chocolate chips. SO good and refreshing – hits the spot every time! You also get a lot of great vitamins and nutrients from the banana and walnuts! Great as a dessert or sweet treat during the day. 🙂

Ingredients:

*Disclaimer – I am including certain brand names of things I use (just because they are personal favorites of mine), but feel free to use whatever brand you like, is the cheapest, is on sale, what you have on hand, etc.*

1/2 Cup Frozen Banana Slices (1 Frozen Banana, Sliced, Will Definitely Cover This)

1/4 Cup Chocolate Soy Milk (or other alternative milk) ~ I use Organic Valley Chocolate Soy Milk

1/4 Cup Walnut Halves

1 Tablespoon Dairy-Free Chocolate Chips/Pieces (*if keeping the recipe vegan/dairy-free) ~ Enjoy Life Foods has great options!

Optional: A few extra walnuts and chocolate chips for topping.

Instructions:

  1. Combine frozen banana and chocolate soy milk in food processor or blender. Mix until fully combined.
  2. Next, blend in walnuts and then chocolate chips.
  3. Transfer to serving bowl and top with some extra walnut pieces and chocolate chips.
  4. Enjoy cold! 🙂
