Superhero Soup for Sickness: Bone Broth, Leafy Greens, Spring Onion, Garlic, Cayenne Pepper and Tofu, Topped with Dollops of Sriracha and Sprinkled with Black Pepper

Whelp. I finally got the plague that has been circulating around my house, the office, my friends, my family – basically, everywhere. I finally felt well enough to cook something the other day and I decided to craft a new recipe from a bunch of ingredients that are claimed to help heal the body (or at least ease some symptoms) during illness. First, I started with a broth base made of chicken broth and bone broth, both of which have great vitamins, minerals and help to rehydrate the body. Next, I added in some leafy greens for an extra vitamin boost. Garlic and spices, which can help clear up congestion. And tofu, for an added protein punch. The whole combination kind of reminded me of a loaded miso soup haha! It was delicious and definitely hit the spot- hydrating, warm, not too filling, and spicy! A new and easy recipe to try if you’re battling illness or just looking for something healthy for your immune system this bad cold/flu season! Small Soup Pan

Ingredients:

*Disclaimer – I am including certain brand names of things I use (just because they are personal favorites of mine), but feel free to use whatever brand you like, is the cheapest, is on sale, what you have on hand, etc.*

1 Cup (8 fluid ounces) Bone Broth of Choice (I used Pacific Foods Organic Chicken Bone Broth with Ginger)

1/2 Cup Chicken Broth

1 Clove Garlic, Minced

Pinch (or more) Cayenne Pepper *Add to taste

1/2 Cup Leafy Greens of Choice (I used baby spinach and chard leaves)

2 Small Spring Onions, Cut (I used scissors for easy cutting)

1/4 Block of Firm Tofu, Cut into Small Cubes

Optional for Topping: Sriracha, Black Pepper

Instructions:

  1. Add everything (minus Sriracha/black pepper)- bone broth, chicken broth, minced garlic, cayenne pepper, leafy greens, spring onion, firm tofu- into soup pan, mixing to incorporate everything.
  2. Heat until warm, then serve.
  3. Enjoy! 🙂

*Refrigerate leftovers for 3 to 5 days.*
