My Version of the “Science Salad”: Apple Slices, Baby Spinach, Walnuts, Capers, Fresh Basil, Longhorn Cheese Crumbles, and Bleu Cheese & Balsamic Vinaigrette Dressings, Sprinkled with Black Pepper

Spicing up one of my all-time favorite salads ~ The “Science Salad”! Granted, you probably don’t know of this salad unless you ordered it at The Periodic Table (Ele’s Café) while studying at Susquehanna University. The original salad is pretty simple – mixed greens, red onion, walnuts, bleu cheese crumbles, apple hunks and a creamy balsamic dressing with a side of bread. This salad is pretty similar, but with a few alterations. First, I used equal amounts of creamy bleu cheese and balsamic vinaigrette dressings versus a crumbled bleu cheese and creamy balsamic. I feel like this combination tones down the flavors a bit without making it too overpowering (if that makes any sense) and you can mix it throughout the entire salad. I used a lighter cheese crumble instead on top (which I felt didn’t take away from the great flavors of the spinach, apple and other components). That being said, I also added some things that added small bursts of unique flavor, including capers, microgreens and fresh basil, making the flavor profile a little more unique. I am not a raw onion fan (I would always order my salad without onions), but you are of course welcome to add that! I love the mix of savory and sweet this salad provides and how easy it is to put together, in addition to the fact it is very filling (I hate feeling hungry after a salad haha!). Ingredients:

1 Apple, Sliced Thinly (I used Honeycrisp)

2 Cups (Heaping) of Greens of Choice (I used Baby Spinach)

1/4 Cup Walnuts (Raw or Roasted, whatever you prefer)

2 Teaspoons Bleu Cheese Dressing

2 Teaspoons Balsamic Vinaigrette Dressing

1 Tablespoon Crumbled Cheese of Choice (I used Longhorn Cheese)

1 Teaspoon Capers

3 Leaves of Fresh Basil (Torn into Pieces)

1 Tablespoon Microgreens (I used Sunflower Microgreens)

Black Pepper (*To Taste)

Instructions:

  1. First, slice your apple of choice.
  2. Place mixed greens in a bowl, top with apple slices, crumbled walnuts, and dressings.
  3. Next, add crumbled cheese, capers, fresh basil, microgreens and black pepper on top.
  4. Mix and enjoy! 🙂
