Piña Colada Inspired Breakfast Smoothie: A Mixture of Fresh and Frozen Pineapple, Light Coconut Milk, Whole Milk and Rum Extract, Topped with Isigny Sainte-Mère Whipped Cream

This may or may not be my breakfast for the entirety of this summer season haha! 🙂 Even though the weather has been on the colder side lately, the flowers and sunshine make it feel like summer is upon us! I woke up craving pineapple the other day (one of my FAVORITE fruits – I honestly wish it wasn’t so expensive or I would eat it all the time haha!). Then that idea kind of morphed into wanting a Piña Colada, but one that I could have for breakfast. That’s when I decided I wanted to craft up a Piña Colada smoothie recipe! I knew the basics of what I wanted in the smoothie, but it was one of those things where I wasn’t exactly sure how the whole thing would turn out. However, this drink is definitely a new favorite! It’s refreshing, not too sweet, packed with a lot of fresh and great flavors, and pairs perfectly with my favorite whipped cream Isigny Sainte-Mère Crème a la Vanille de Madagascar! Even though it’s listed on here as a “breakfast smoothie”, you could definitely turn this into an alcoholic treat very easily by just subbing the rum extract for actual rum (I definitely will have to try this variation sometime this summer!). But for now, we’ll keep it workday breakfast friendly haha! Hope you enjoy this drink as much as I have! 🙂

Makes 1 Serving (*Can Easily be Multiplied)

Dry Measuring Cups

Liquid Measuring Cup

Measuring Spoons

Ingredients:

3/4 Cup Frozen Pineapple (*If you want your drink to be more “ice smoothie” like, add more frozen pineapple or some ice.)

1/2 Cup Fresh Pineapple

1/4 Cup Milk of Choice (*I used whole milk)

1/3 Cup Canned Light Coconut Milk

1/8 to 1/4 Teaspoon Rum Extract (*Depends on your taste preferences; you can also add actual rum)

Filling/Topping Options: Fresh Pineapple, fresh cherries, Isigny Sainte-Mère Crème a la Vanille de Madagascar whipped cream, unsweetened coconut flakes, cinnamon sugar

Instructions:

  1. Add the frozen pineapple, fresh pineapple, milk, coconut milk and rum extract to a blender. Blend until smooth.
  2. Pour into serving glass and garnish with additional fruit, whipped cream and any other toppings of choice.
  3. Enjoy! 🙂
