Tomato & Peach Salsa, Cream Cheese and Balsamic Baguette Bites: Sliced French Baguette, Topped with Plain Cream Cheese and a Salsa Composed of Cherry Tomatoes, Ground Cherries, Peaches, Onion, Basil and Capers, Drizzled with Balsamic Reduction and Sprinkled with Black Pepper and Salt

Tomato and peach season – two of my favorites! And what is even better is the fact their flavors complement one another incredibly well. One thing that is awesome to make when you have a bunch of them on hand is fresh salsa! Paired with bread, cream cheese and balsamic, you have a pretty epic flavor profile going on. I was fortunate enough to have organic cherry tomatoes, onion and ground cherries all from  Taproot Farm on hand, along with local cream cheese from Melanie’s Medleys  and fresh bread from our local Italian market. This recipe is quick and simple, allowing it to be paired with any meal of choice to add some flavor and color as an appetizer or perfect for a yummy snack. I hope you all enjoy this fresh and easy recipe as much as I do – happy snacking! 🙂

Makes Multiple Servings (*Great for an appetizer)

Ingredients:

1 Cup Sungold Cherry Tomatoes, Cut into Small Pieces

1/2 Cup Ground Cherries, Halved

1/2 Cup Fresh Peach, Cut into Small Pieces (I used Donut Peaches)

1/4 Cup Onion, Cut into Small Pieces

1 Tablespoon Capers

1/4 Cup Fresh Basil, Torn into Small Pieces

Few Dashes of Salt

Few Dashes of Pepper

For Serving: 1 Large Baguette, 1 Container Cream Cheese (I used the plain cream cheese from Melanie’s Medleys), Balsamic Reduction and Extra Pepper

Instructions:

  1. First, combine cut cherry tomatoes, ground cherries, peach, onion, capers, basil, salt and pepper in a mixing bowl, stirring to combine.
  2. Next, slice your baguette into small pieces and spread a layer of plain cream cheese on top. (*You can toast the bread if you prefer, I just like mine fresh and chewy haha!)
  3. Add preferred amount of salsa mixture on top of that and drizzle everything with balsamic reduction and sprinkle with black pepper.
  4. Serve right away and enjoy! 🙂

*Store leftover salsa by itself in the refrigerator.*
