Anybody else embracing savory yogurts? This is the perfect addition to any meal or a meal on its own. Creamy, crunchy and packed with fresh flavor, this is an easy and quick dish to add to any menu that requires no cooking!

Happy Week 2 of Taproot Farm’s Summer CSA! I hope you all are enjoying the fresh and delicious in-season goodness as much as I have. This simple spread is a tribute to my new love of savory yogurts. I love eating yogurts as a sweet dish, but only in recent years have I embraced its ability to be used in savory dishes as well. This savory yogurt spread uses organic French Breakfast Radishes, Hakurei Turnips, and Sugar Snap Peas, but feel free to mix it up with other crunchy and fun additions you have on hand! I hope you all enjoy this fresh and flavorful dish as much as I have – happy eating!

Makes One Salad (*Can Easily be Multiplied)

Knife

Measuring Cup

Ingredients:

1/2 Cup Yogurt or Cheese of Choice (I used Siggi’s Plain Whole Milk Skyr I had on hand, but feel free to use other plain yogurts, cheeses, non-dairy products of choice)

1/2 Cup Sugar Snap Peas, Sliced Thinly into Strips

1 Breakfast Radish, Thinly Sliced

1 Hakurei Turnip, Thinly Sliced

Fresh Herbs to Taste (*I used a couple leaves of fresh basil)

Black Pepper/Sea Salt to Taste

Olive Oil

Other Ideas/Options: No dairy on hand? Skip it and go for the simple vegetables! Got some spring onion, green garlic, zucchini, etc. on hand? Cut it up and throw it in the mix! Feel free to mix it up and get creative based off of what you have on hand.

*Feel free to add the amounts of each ingredient you prefer – it’s easy to adjust this recipe as needed to make it larger, smaller or in multiples!

Instructions:

  1. First, spread your yogurt (*or dairy of choice) on the base of your plate.
  2. Next, top with thinly sliced snap peas, radish slices, and turnip slices (*and any other vegetables of choice).
  3. Sprinkle with fresh herbs, salt and pepper if desired (*the salt definitely helps to bring out the flavors of the radishes/turnips).
  4. Drizzle with olive oil.
  5. Enjoy fresh! 🙂
