Enjoying the last of the summer fruit in the best way possible – in a tasty mixed greens salad!
I’m soaking up all the summer fruit possible – especially the stone fruit! Weaver’s Orchard is just up the road from my parent’s house, and the other week I picked up some peaches, plums and apricots. Typically we snack on these throughout the week, but I was in the mood for a refreshing salad for dinner one night so I went ahead and tossed all of the ingredients together. Like I said, super simple and easy to change up through your own additions and favorite toppings! This is a quick, easy and delicious salad that is a great way to round out the summer season and to use some Taproot Farm organic lettuces or mixed greens you may have on hand. Ingredients:
6 Cups Mixed Greens/Lettuces
2 Large Peaches, Diced
2 Large Plums, Diced
4 Apricots, Diced
1/2 Cup Feta
1/4 Cup Pecan Pieces
Black Pepper
Dressing of Choice (I used balsamic)
Instructions:
- Add mixed greens to your salad bowl.
- Add pieces of various stone fruit on top.
- Sprinkle on cheese and nuts. Crack black pepper on top.
- Service with dressing of choice.
- Enjoy! 🙂
