Apple and Fennel Salad

The perfect crunchy, nutritious, and filling treat as the weather starts to cool down.

I can’t believe this is my final recipe of the Taproot Farm Summer CSA season. For those of you who have followed along, made my recipes, and shared feedback, thank you so much! I am greatly looking forward to the next 7 weeks of Taproot Farm’s Winter CSA, where I will continue to create and make recipes. This salad serves as almost a “bridge” between the Summer and Winter CSA worlds – apples, greens and fennel tied together with some crunchy walnut and pumpkin seed toppings. Very simple and nourishing, this salad is an easy go-to for a quick lunch or dinner. I’m always a fan of salads I can throw together with ingredients I already have at home. I hope you all enjoy this simple and delicious recipe, and please share feedback with me for any recipes you’d like to see in the Winter CSA season!

Makes 1 Serving (*Can Easily be Multiplied)

Knife

Measuring Cups

Measuring Spoons

Ingredients:

3 Heaping Cups Greens of Choice (I used spinach, but you can use lettuce, mixed greens, etc.)

1 Apple, Sliced Thinly (I used a local gala apple)

1 Bulb Fennel, Sliced into Thin Strips

Pumpkin Seeds

Walnuts

Goat Cheese

Black Pepper

Dressings of Choice (I used a balsamic reduction)

Instructions:

  1. Combine your greens with apple slices, fennel strips, pumpkin seeds and walnuts.
  2. Sprinkle with goat cheese and black pepper.
  3. Drizzle with balsamic (or dressing of choice).
  4. Enjoy! 🙂
